2006 Trust Cellars Cabernet Sauvignon:
The warm growing days of the Horse Heaven Hills (Phinney Hills and Champoux Vineyards) and the Columbia Basin (Bacchus) provide the bulk of Cabernet for this bottle. A little Walla Walla off the "rocks" (Kelley) provides some mid-palate lushness and the whole blend is softened with 20% Merlot from the very cool Conner Lee Vineyard on the Wahluke Slope. Lush dark berries, plum, and minerality race through this well integrated wine.

It is with pleasure that we introduce our newest member to our team, Chantelle Pabros, who will bring her expertise in wine education, research and insight of the Chicago market to ADI.
Chantelle Pabros is a Chicago-based Sommelier and
Wine Consultant. Traveling from an early age offered exposure to
different cultures, which began an endless pursuit of refining her
education of the culture that surrounds food and wine. She began her
career with a three year stint at Joel Restaurant. Three years at The
Dining Room at The Ritz-Carlton Buckhead allowed her to perfect service
skills, hospitality, and to prepare for the Court of Master Sommeliers
Exam. She was working at Bastide in Los Angeles when Lettuce Entertain
You Enterprises moved her to Chicago to open L2O, as the restaurants
Wine Director. She has worked harvest in France, New Zealand, and
California. She continues to travel the entire globe, but visits to
wineries in Loire Valley, Champagne, Languedoc-Roussillon, Piedmont,
Australia, and Croatia have truly shaped her career.
